Cauliflower is grown in a sequence of early, mid and late varieties so that curds reach the market from the start of the cool season to its end. Hybrids are bred for compact, white, well-covered curds, uniform maturity across a field, and heat tolerance in the early group.
Growing notes
Nursery-raised and transplanted. Timing matters more in cauliflower than in most crops: each variety has a window in which it forms a good curd, and sowing outside it costs quality. The crop needs fertile soil and steady irrigation.
- Choose the variety for its sowing window
- Transplant at 25–30 days
- Harvest curds while firm and tight
